Hello chic friends! I’m excited to be able to share my all time fav dessert with my readers today! This butter recipe strawberry cake is a family favorite, in which I started baking almost twenty years ago. I wanted to surprise my husband’s grandmother with her favorite cake and it fell apart and looked like someone blew it up! My husband of course made fun of it and nicknamed it, Desi’s Strawberry Explosion Cake! We ended up scooping this delicious mess with spoons! Now, years later we’re still enjoying this spring and summertime dessert favorite.
From my home to yours…
For this cake, I used Duncan Hines butter recipe cake mix (2 boxes), a large pack of fresh strawberries and two large tubs of whip cream.
Mix one cake batter for each pan.
Cook until golden brown on top. I like to use a toothpick to see if the middle is fully cooked. I love to making sure that the middle is still slightly moist, as to not overcook.
Flip upside down on the dish that you will be serving it on.
Cut the strawberries into thin slices (leave 4 of the prettiest strawberries out to use as decoration for the top of the cake) and sprinkle the sliced strawberries with tons of sugar! Mix well.
After you slice and sugar the strawberries, put them in the refrigerator while you start to layer on the whip cream. Middle of the cake first.
Now it’s time to place a thick layer of strawberries for the filling.
You will want to avoid placing strawberries on the very edge, because the strawberry juice will seep down the sides.
Next, layer more whip cream over the strawberry filling. Yummmmm!
Time to add the second layer of cake! Carefully…
Whip cream time again! Don’t be shy, make sure you cover every square inch with a thick layer.
Cover all the sides and keep it nice and neat towards the bottom.
There she is! Almost ready!
Here comes the design part! Place the strawberries in any way you see fit on top of the cake.
Pretty and ready to share!
**Note: I’ve baked this cake with a homemade recipe, as well. When I have more time that’s usually the route I take. I do have to say that the Duncan Hines Butter Recipe cake mix is moist and delicious, as well!
