The Coastal Dessert: My Strawberry Lobster Cake

Happy weekend, friends! I couldn’t resist sharing this fun and festive dessert I made—my very own Strawberry Lobster Cake. I first spotted these cakes going viral this summer and knew right away I had to try one myself. Since I’m already a strawberry cake baker, it felt like the sweetest little upgrade—and the perfect chance to bring a bit of seaside charm into my kitchen.
This cake is the best of both worlds: classic strawberry shortcake vibes with a Nantucket twist. It looks right at home on a table styled with blue hydrangeas, woven placemats, rattan accents, and bamboo flatware—all those coastal grandmother details that remind me of summers on island. It’s whimsical, nautical, and just plain fun.





The Most Delicious Strawberry Cake Recipe

Ingredients
1 box of butter recipe yellow cake mix
1 large of cool whip tub
2 containers of fresh strawberries (if strawberries are not in season use 1 bag of frozen strawberries)

Directions
1. Follow recipe for the butter yellow cake mix and bake.
2. While the cake is baking, prepare strawberries by washing them and cutting them into thin slices and placing them in a bowl.
3. Add lots (and I mean lots) of sugar to the strawberries, stir and place them into the refrigerator to cool.
4. Let the cake cool and remove from pan. With a long knife cut the cake in half through the middle so that you have two layers of cake.
5. Spread a thin layer of cool whip over the bottom layer of cake (as seen in photo above).
5. Place strawberries (without the liquid) carefully on top of the first layer of Cool Whip without letting the strawberries go over the sides.
7. Place second layer of cake on top of the cool whip and strawberry layer.
8. Spread cool whip all over the top of the cake and sides.
9. Place clean strawberries on top of the cake for decoration (or create a lobster design with strawberries).
Note: It’s best to make the cake the night before and leave it in the refrigerator overnight. You can also make the cake with 4 layers. You just need to buy another box of cake and tub of cool whip.
