DAIRY FREE HOMEMADE CHICKEN TORTILLA SOUP

The weather has been pretty cool here in Miami, which makes it a great time to enjoy homemade soup. My husband does the cooking in my house. It all started after I had my third child where he wanted to help me out and he’s been cooking ever since. He loves it! He was one of those guys that cooked delicious meals while we were in college, so I knew early on he was a keeper. Ha ha! Anyway, let’s talk about this delicious dairy free homemade chicken tortilla soup he made for us last week. We loved it so much that we ended up having it for lunch and dinner a few days in a row! Sometimes my husband will make a variation of this soup and this time he left out the tortillas, so instead we added avocado for a healthier choice. Enjoy!

DAIRY FREE HOMEMADE CHICKEN TORTILLA SOUP

DAIRY FREE HOMEMADE CHICKEN TORTILLA SOUP

Ingredients

2 chicken breasts chopped or shredded (baked, grilled, or roasted)

1 cup of cooked rice

1 regular bag of carrots peeled, roasted, and chopped

1 bag corn roasted

1 can red beans

1 medium chopped tomato

juice of 1/2 a lime

salt to taste

1 packet Sazon (culantro and achiote)

1 packet of chicken broth

 

These Ingredients Have to be Blended

2 jalapeno peppers roasted (remove seeds and stems if you don’t want it spicy)

2 red chili peppers roasted (cayenne) (remove seeds and stems if you don’t want it spicy)

1 sweet potato cooked and peeled

1 idaho potato cooked and peeled

1 roasted onion

1/2 red bell pepper roasted

1 cup fresh cilantro

3 oz of chipotle chiles in adobo sauce

 

STEP 1 All roasted ingredients can be done at the same time in an oven at 400 degree F for an hour.

STEP 2 Blend all ingredients together listed under blended.

STEP 3 Combine all ingredients in a pot and add water to get the consistency you want. Heat through for 1 hour.

STEP 4 Add fresh avocado to garnish for a healthier choice. You can also add tortillas, sour cream, and shredded cheese.
